The device, the Coravin is not so much useful in the extraction of wine from the bottle but rather to the wine that remains in the bottle. That means that restauranteurs who sell wine by the bottle benefit because the wine left in the bottle remains at the same high quality. This means there is less wastage.
The device basically keeps wine in an opened bottle fresh indefinitely and this has been proven with numerous blind taste tests conducted by high profile wine experts and sommeliers.
For the more expensive wines, the Coravin is quite a revolution because people who probably wouldn’t purchase an entire expensive bottle, are more willing to shell out for a glass. It allows restaurants to sell expensive wines by the glass and showcase the wines more.
