Watermelon is the perfect fruit for Spring, especially on those hot, dry days. Here’s an awesome refreshing watermelon mimosa that will complement any brunch.
Made with watermelon puree and Champagne or Prosecco, these easy to make cocktails can be prepared in advance and the champagne/Prosecco can be added as you serve.
To make the watermelon puree, dice your watermelon into cubes and puree. Add some lime juice and then strain into a pither. Chill in the fridge.
When you’re ready to serve, add your choice of a dry Champagne or Prosecco.
